I'm majoring in philosophy (the faculty follows the french tradition, not the anglophone tradition). The classes are cool and all but the job market is awful. Only now I realized that I want a job that pays well and want to invest the income to have even more money. I regret being a bad student at high school because if I were a good student I'd probably be majoring in some STEM thing, law or medicine, which are the high paying jobs.
I'm not sure if I want to be a doctor and I'm not interested in becoming a loyer. Anything tech-related seems to be the best option if I'm after a good income, but I'm not good at math and am not really interested by it, although I liked to learn propositional logic. Had I study math properly on middle school and high school, I'd probably be on the right track to earn money in the future, considering that that would mean I would be majoring in something related to math.
I'm planning to learn math in order to start liking math. But I'd like to have a goal, which is enrolling in another major that gives me better career prospects. I'm just not sure if there actually are any like that. CS seems to be dying. I could try to learn Statistics and become a Data Scientist. I'm just afraid it would be too hard of a major/profession. Why things have to be so complicated?

Not anymore. AI and infinity jeets fucked everything. Go into some manual labor, it's unironically over for basically anything you need a degree for. AI is solving Millennium Prize problems now, imagine how much worse it will be after you finish a degree in 4 years time.
If you really insist on getting a degree, become a vet or something because that won't be automated. Even if an AI robot did learn to treat animals it would spook them. So the person who drives out to a farm to treat an injured cow will still be a human. Basically the further your job description is from "Sitting at a computer", the safer you will be.

If you really do, consider graduate studies in programming languages. There is a branch of CS that is based on logic and used in theorem provers like Rocq and Lean. This will be a money making field if you do well in your PhD and get a job at a research team at FAANG. But it is also an extremely autistic field.

let's go with OP's example of wanting to be a data analyst

nowadays you can just plug in your quarterly stats into an AI and they can analyze it instantly then give recommendations and summarize the implications and etc.

MY undergraduate studies were so low quality that I can honestly say I would have received the same quality of instruction if I just watched Youtube video lectures on all the same subjects, pirated the textbooks off libgen, and read the articles on scihub. It's like paying tens of thousands of dollars for a list of recommended reading that you could get from some autist operating a subreddit on the subject of your major
