The whole point of meal prep is cooking for one and still getting some variety. Defeats the purpose if making one month of the same fucking meal every day.

Same with freezing curry. I've tried making stew without potatoes so I can freeze it, then add potatoes to it when I reheat it but that's such a hassle. Not sure what the best solution is, maybe canning it in mason jars?

You could probably freeze your base and then can potatoes in beef stock, I bet that would be good while still fast to throw together in a pot. The best part of stew is the thick oil slick on top. How fast does turning rancid even happen? Butter is like all fat and it sits on the counter without going bad just fine. Unless it's a doomsday cache and meant to keep for decades I don't see why canning recipes can't just keep the fat.
