Because they redesigned the UI. You can simply switch to a different theme, they have integrated ones, just go to
about:addons
and pick any you like

Adding to my own post. I personally use the Ash one, its beautifully black.

If you dont like the UI redesign at all you can switch back to the previous design by going to
about:config
and searching for
browser.nova.enabled
put that from "true" to "false" to rollback
