I don't know why animals evolved two nostrils but two things come to mind. We have evidence animals use stereo smelling and differences in concentration to help detect the source of scents. The other is in humans atleast the nasal cycle of alternate closing of each nostrils seems to play a role in decongestion and allows membranes to rest and recover.

Possibly of misleading relevance to this conversation, but there is a large risk in patients who undergo excessive or unnecessary turbinectomies or turbinate reduction surgeries can result in quite torturous side affects as the passages drys out and becomes damaged making it very difficult to breath and significatnly reduces quality of life. It is unclear what this means from an evolutionary perspective if this is merely a symptom of traumatic surgeries to address uncommon issues or if this tells us an essential function of nasal function dictates nasal passage size and could not be evolutionarily mitigated by other means.

It's just bilateral symmetry. Like our eyes or ears, our proto-nostrils initially develop on either side of the head in embryos and only later converge to the front. It doesn't make a fused hole quite impossible but the design is significantly biased towards dual nostrils/nasal chambers unless it's strongly selected against. Even elephants or baleen whales still have dual nostrils/blowholes. Toothed whales/dolphins manage to have a fused opening that still immediately branches out afterward, and in some clades it's actually asymmetric (one proper, offcenter nostril + a more vestigial one that doesn't have its own hole.)
The only vertebrates that have a true fused nasal chamber/passage are probably cyclostomes (lampreys and hagfishes, which diverged before fucking jaws were invented)

Though I think it likely has more to do with the use of the nostrils, eyes, hands, etc. We smell, hear and see in 'stereo' that is to say that having 2 of these things is what gives us more of a 'surround sound' style use instead of something more basic. 2 parts wired into a singular brain making sense of inputs from varying directions = true 3d.

Also you might as well ask why does the body tend to make 2 of most of its parts but 1 of the ones most vital, like the heart? Isn't that a more interesting question.
