Satellites, sure that's doable - and has been done - but a habitat that can support humans indefinitely in empty space? We don't even have such a thing (other than the planet Earth itself).
Maybe they will invent new humans that have no respiration or metabolism.

They're right and it's a pretty obvious problem that's rarely addressed. Pushing the craft forward is by far the easiest problem. It's not just that colliding with a grain of dust will produce a powerful blast; much of that energy will come in the form of highly ionizing radiation. Obviously the best protection is moving the pseudo-Whipple shield really far in front of the craft so that the expanding sphere of radiation and plasma attenuates as much as possible before colliding with the craft. The problem is that the scale is fucking nuts. Just think about it; if the craft is moving at 30 000 km/s (~10% c), and the shield is 30 000 km in front of the craft, that would imply a ~1 second delay between a collision against the shield and the craft plowing through the resulting blast.
It gets even better though: all this dust is MOVING! Specifically: a component of that motion will be perpendicular to the ship's direction of travel. Some of it will be moving at several km/s. There's no way around it the shield needs to be incredibly wide. That also means you'll be colliding with way more crap than you'd otherwise have to (and be bathed in the resulting radiation).
Maybe someone already tackled the problem rigorously but I haven't seen any convincing solution, or proof that these events would be unlikely enough to just be ignored.

There’s not much of a reason to leave the solar system for a while, but if all goes well, we should be very advanced in just a few thousand years, and it will be trivial to colonize other star systems even if it does take 10,000 years to get there, with some sort of combination of AI, cryogenesis, genetic engineering, cloning, immortality, giant spaceships, etc. Even if our colonies lose contact with Earth they’ll have all the data they’ll ever need on quartz chips that will last the whole journey (see Project Silica).

Within our own solar system we are shielded in a sort of field, so to speak.

There was a star that passed through our system 1 million years ago. I had a future jump to the end of Earth's time (It was a million years) and I was placed in with some miners to help drill a hole for what was coming. Later observations I saw a mass hit a Neptune moon and decimate it.

At the time I didn't know much and the future people didn't have me help them calculate it. I saw the final ending of the Earth and 3 spaceships took off. One in the wrong direction, it was smaller and had an interesting dispersal from it's engine, like a large 4x spray.

Is maneuvering not an option? Would we not have equipment sensitive enough to detect small fast objects like that and course correct very slightly far ahead of time?
What about interception with high powered lasers? Kinetic solutions? Angled ERA? Spinning very long wires?
Or just brute forcing with a hollowed out asteroid(s)?
How thick would lead/water need to protect the crew from radiation?

Humanity in its current state is unfit to travel past the solar system. We would drag all our dregs along and they would destroy, pollute, and exhaust anything we found. Humans would be like locusts among the stars.
Currently only a vanishingly small fraction of all Humanity is fit to exist as a space faring species. Only if that small fraction became the absolute sum total of all Humanity would it be ethical and feasible to travel among the stars.

I think it is the last known star to pass extremely close to our solar system was Scholz's Star, a dim binary system consisting of a red dwarf and a brown dwarf.

It grazed the outer edge of the Oort Cloud about 70,000 years ago, coming within roughly 0.8 light-years (52,000 astronomical units) of the Sun.

It would disturb some icy cometary bodies towards our sun.
