Why do hippos have four toes in each foot but a rhino has only 3? I honestly don't know why one pachyderm would evolve to have an odd number of toes on each foot while another pachyderm that's closely related have an even number

hippos are Artiodactyls, rhinos are Perissodactyls (literally even-toed and odd-toed ungulates)
Those diverged like 60 million years ago.

They're not "closely related" at all. Pachyderm is an old obsolete classification for mammals that have thick skin.
