Jokes aside though, first they learn by copying, then once they understand how it works they start developing their own ideas and technologies. And if the West get greedy or rest on their laurels as they have done so often in the past, eventually they get overtaken. There's plenty of examples, Japan blatantly stole western IPs and tech during the 50s/60s as they rapidly developed their country post-WW2, their products were once an absolute joke in quality, but then they got on par with the West, then they became known for high quality. At one point in the 80s/90s they were even set to overtake the West in terms of development and economy. China is following the same track and you can already see them starting to advance ahead of the West in things like smartphones, EV cars, power generation, etc. I expect a similar line here, first they copy, then they will develop their own. Whether they get ahead of SpaceX or not depends on how lazy Musk gets. And SpaceX development does seem to have slowed down a lot in recent months.

Engineering is the very thing that's slowing them down. They're working on clearing the latest issues that have cropped up on Starship V3 ahead of the next launch, and once that engineering and fabrication work is complete, they'll be ready to start the test campaign and then go fully orbital for the first time.

Payload margins dropping off fast generally implies a lower payload fraction, i.e. the second stage is relatively heavy. Less of the stage mass being payload means subtracting a given percentage of the payload yields less overall dV. Not too surprising. I haven't found any GTO/GEO payload numbers for this rocket, but it wouldn't surprise me if it's incapable of reaching those orbits at all - not that this is a huge flaw in the era of LEO megaconstellations.

The hovering landing profile implies either very deep throttling of the engines (advanced tech, unlikely) or the first stage is also a pig (most likely). It's not inconceivable that they could have deliberately left extra fuel or dummy mass in the first stage in order to be able to hover, so they could demonstrate a successful landing with lower risk.
The "hoverslam" maneuver as seen with Falcon 9 is both more fuel-efficient and demands less of the engines, but it's obviously not easy to get right. It would be logical to start with hovering and slowly turn up the heat over time, provided the rocket has the capability. We shall see.
