Statistical averages, mostly.
Let's say you graph a random walk where each step is 50/50 +2/-1. Zoomed in you'll see fluctuations deviating from the average all over the place. But zoomed out far enough and you'll see the whole graph is pretty much just a line with a slope of 1. Those random fluctuations become irrelevant at those scales.
