Going to be doing a somewhat niche bachelors in Engineering after the Foundation year.
Just a bit worried because the employment section is really vague compared to other more "traditional" fields like Civil Engineering or Mechanical Engineering.

I hope I can manage to get a job afterwards, going to do everything I can try. Summer Internships, joining the official membership organisation as a student and joining the Society that is focused on it.

Studying a field that is called Renewable energy for undergraduate will scare off the hoes (employers) because there are many cringe non-rigorous degrees like that and you will have a very bad time pivoting to another field out of necessity. You are better of studying a traditional engineering degree and then going into the area. Just check out the job listings Bro.

What is your field? In my field, the only people hiring PhDs are research universities with hospital branches, like Emory. Most companies only hire PhDs temporarily until they can replace them with MSc so they don't have to pay as much. Typical US job cycle.

Something like optical spectroscopy, instrumentation and semiconductors

The only people doing optical spectroscopy pay 40k, the instrumentation people want someone making high throughput standardized fab equipment instead of harebrained diy setups, and the semiconductor people want someone who has done epitaxy instead of stirring gunk into a cuvette or pointing lasers at wafers.

I really thought it would be employable and in the US it might be but here the jobs just do not seem to exist.

I spent many hours in a microbiology and human cadaver physiology lab in uni, and the major hospitals have rejected every single one of my apps for an entry-level lab assistant even though I'm overqualified based on the position requirements. Guys, I wonder about how research or jobs in applied mathematics. I want to study a masters in my country, it's a good institution. But I wonder about getting too niche or too broad. It doesn't seem as easy as choosing an actual topic like mathematical finance and then work at a bank. I'd wish there was a guide to what to expect, maybe I could make an academic career work with these topics? By applied mathematics I mean things like machine learning and optimization theory. While I'm there I guess I would be able to choose to be more computational or more theoretical, both are interesting... I am unsure of how much time I will have to think of shit like these decisions with the how hard the courses can be.

My wife and I pull a bit more than $400K together. Of that, we put about $50k into 401Ks, $10K into HSAs, pay about $30K for private health insurance, pay $2K per month for infant daycare, $5K a month for housing, $1K per month for 2 cars, $2K per year for car insurance, etc. etc. and we only get 20 days vacation and 10 holidays a year. Your 60k€ gets you an entire month in Lindau at bargain basement vacation rates.

The state pension/healthcare are the bare minimum and are unlikely to exist by the time I would need to access them. Currently, the only healthcare access I have for everything short of cancer is through my employer's health insurance, simply because the state healthcare system is overloaded. For state pension the retirement age for my generation is 70 and again that will be poverty level.

Housing is cheaper but not as much as you would think and certainly not by as much as my income is lower. Most goods are similar or more expensive than when I lived in the US. Basically, of course I would happily quadruple my income and costs, because that would quadruple the amount saved.

I live in a one-bed flat, I do not own a car, do not have pets, do not have kids, do not have expensive hobbies and never travel. I've worked quite hard for all my life, have a good CV, and am entering mid-career in a technical field. With all that, I save about 1k a month and most of that goes into trying to accumulate savings for retirement, which is not really working. I simply could not afford to have a family, even a car and a dog is pushing it.
