As someone who tried the medicine path, don't go for it, especially if you are male. Not only is the healthcare field mostly female dominated-centered field centered on caretaking, thus limiting your chances of getting hired as a male. The hours for any job in this field is very long and the pay is shit for the investment you put into, even for traditionally respected roles.

Also I think you are being a bit dramatic with how many jobs AI will take. AI is very good at very sedentary and repetitive kinds of work, just like the ones you listed. It's not good at work that have more labour complexity and movement to them. The reason jobs are so hard to get nowadays has more so to do with company policies and the world economy than any scapegoat technology.

Work on a tow boat.
It's an industry that refuses to advance past the 1970s and it cannot be automated as easily as trucking and trains. A single tow barge carries as much resources as 52 semi trucks so it's too efficient to be replaced untill teleporters are invented.
Infact, automated trucking and trains will only increase the demand for river towing because it will make it cheaper to transport resources to and from the industrial parks where the barges are loaded and unloaded.
Pretty much every company gives you full health coverage including dental, life insurance and a 401k and starting pay is always good.
You eat like a king too and companies pay for all of it. The only downside is that youre on a boat for 3-4 weeks before you get 2 weeks off. The upside is you have better benefits and comparable paychecks to people who waste years of their lives going to universities.
