Video files are not executable code, and any vulnerabilities that some specific random video player of your choice might have are extremely useless to exploit because the malicious actor would have to guess the player right. An .exe that says "click me to win $10" is hundreds of times more effective than a hypothetical attack like this.

If a malicious video can target Media Player Classic, it can similarly target the x264 decoder instead, or ffmpeg, or anything else in your tool chain. If the hypothetical threat exists in the first place, then you are equally as pwned with the same probability even if you use your approach.Not only is your advice unnecessary because of the reasons explained in detail above, but also it actually does not and cannot guarantee a "safe" resulting new video.
