I heard that Ars Magica has an OGL.

Does it have a SRD

Sell me on this game and which edition is good

Ars Magica has you make multiple characters, a magic one and at least one nonmagical one. Your magical character's job is to learn and create magic spells, while your nonmagical character's job is to act as their servant and meat shield. I've only ever read the PDF for the most recent edition, but haven't heard about any edition wars, so I assume the newest one is the best one.

Yes it does. It also has a PPD, a set of CDXz's and a big fat FU.

I care more about the Mythic Earth aspect

It does look like The Substance. That movie.

I wasn't aware of it having an open license in the first place, but a simple search shows that yep, it does, and nope, there is no SRD

I have played wizards in Mage: the Ascension, Mage: the Awakening, Vampire: the Masquerade, D&D (multiple editions), 2d20 Conan, etc. etc...
Ars Magica (I played ArM 5) is the wizardiest game about wizards doing wizardry. You got rules for crafting your own spells, building a wizard tower, writing and trading grimoires, enchanting objects, training up an apprentice, waging magical duels or sneaky long-distance wizard wars, and assembling away-teams of servants and minions.
Fair warning, though, it plays really differently to most RPGs. I think that is also a positive.

I might yoink this, I've been really thinking of a Harry Potter campaign lately. I know, I know, the worldbuilding kinda sucks but one of the appealing things was a lot of the magic and lore referencing real world alchemists and folklore and stuff, and that's one of the few things I know about Ars Magica.

Is there a spell casting cheat sheet?

I seen them before, but it's pretty simple the point you won't really need it after a while.
