It's not about what classes D&D "should" have, but about how the classes work.

Instead of a Monk class, it would make sense for every race to have its own ancient martial arts that incorporate their natural advantages, and characters start with "white belt" level basics.
Every unarmed move should reduce target HP, whether it's a push, an attempted grapple, etc, since HP is an abstraction of endurance, fighting stamina, and luck.
More investment would obviously grant better moves.

Instead of a Fighter class, it would make sense for each background to have a list of weapons to choose from, reflecting both the racial history of weapon advancement, and the training of the character himself. Some weapons like clubs and spears might be common to all races, with some weapons being more unique; savage orcs might have jagged curved cleavers while dwarves might have heavy long-maces.
Weapons would definitely be better than unarmed strikes in terms of damage output, and an innate ability to parry depending on the weapon, but unarmed's utility would outclass weapons. Plus, weapons could synergize with martial arts, using disarming grapples, follow-up kicks or shoulder charges (spiked or enchanted armor can help this too).

Then, since D&D is so magic-heavy, various forms of gameplay could be dedicated to the schools of magic. The "master spell list" would have to be discarded, and it would be better to have each school be from a different supernatural or unnatural source, so while it's all "magic", each form could have different ways to use, different costs, and different consequences.
More importantly, things would need to be made so instead of having one correct answer, each power would be viable in its own right.
Of course, the different forms of magic should be able to synergize with weapons and martial arts the character can use, too.

And that's ignoring D&D's other vague, redundant, or contradictory mechanics that need fixing.
