Once you've detailed all this, you can go into an open discussion with them. Maybe even have a public audience. Act like you will simply argue on a factual level. Your goal isn't to prove them wrong in a traditional sense though, as any textbook is written by mortals and therefor cannot fully encompass the meaning of abstractions like "love" (which is only one of many sounds made by what considers itself sentient to attempt to describe an spect of creation) but to corrupt the Paladins and their "logical" attempts by leading them ad absurdum. Your goal is to have them question their fundamental understanding of reality leading them to nihilism by showcasing the futility of reason as a whole, to lead them and the audience astray.

I don't really see how their definition would exclude obsession, but if it is established to contradict her behaviour you can give in and let her lose all affection for anyone else (or actively want to exterminate everyone and everything else). That way even if she doesn't care about him more than the bare minimum, she still "loves him more than anyone in the world" by the letter of the deal.

First off, I have to scold you, little devil, for not making the woman just hate every other person. That way her feelings for the man could stay unchanged (or actually get worse). Since she still would "love him more than anyone in the world" (because she hates everyone else even more). Perhaps you can still skew it that way?

If that doesn't work I see three ways to talk yourself out of this :
If she has not yet been seen showing romantic affection for anyone, you can argue that her way of loving someone is just the way she is acting now naturally. Who are these Paladin to tell anyone how to behave when you are smitten? Is it any less of a love if it's not the typical flirtatious behaviour?

Method 2: Maybe this IS the purest form of love. It was asked of her to love more than ANYONE in the world. Even the most loving person has a capacity for malice towards the loved one. His wish however, being so absolute in it's wording, removed this natural ability and we are therefor witness to a being unnaturally onesided and therefor previously unseen. He shouldn't have demanded such absolute feelings. This is a lesson that everything should be in measures and all needs it's counterbalance, lest it become destructive. Even love.

If, however, they do know you have simply "infected" her and can somehow prove it, you can still go the route described above and argue there being no real way of defining "love" because it's all futile attempts at abstraction. Poetry has made many an attempt at formulating these feelings and admits to never having succeeded. Anyone who ever loved would know this! (Potential backhanded insult towards the Paladins.)
