Because Warhammer has had dozens of writers over the decades and most of them want to add their own shit while trying to keep everything somewhat coherent so people buy more toys.
Custodes have less endurance than Space Marines. They need more food and water, can't do any of that hibernation stuff and take longer to recover from injuries. That's why they're rarely used outside defensive roles.
