Yes, I know incubi and succubi are (mythologically) the same demon that switches between genders. But I mean in the fantasy sense - There are a lot of succubi, but I think incubi don't show up as much, and don't really 'do their thing' of seducing women.

It just devolves into haha buttrape, eeww because most players are guys so the whole thing doesn't appeal in general, like how lesbians are always the "safe" gay option for inclusion. Generally fantasy stuff (games, novels, etc) are dominated by male readers. So a incubus, let alone a successful incubus, is rarely going to be seen because it doesn't apply to the interests of the reader. You DO get them in women's novels and women's stories here and there. In fact, plenty of dating sims have an incubi bad boi or two. But if you wanted them in a work for men, the incubus would have to be the main character so that the man reading would see their conquests as something to root for rather than uncomfortable.

They don't actually refer to genders but to actions. "Incubus" means "someone who lays down on"/dominant "Succubus" means "someone who is lain on"/submissive. Incubi are just typically male and Succubi female because of gender roles from a time when people actually thought if a woman was on top the man could get pregnant. Even at that time it was mostly treated as a joke, but there are always morons who take a joke seriously. Slight digression, but to answer your question the gender-neutral term is demon.

I can think of few stories specifically featuring incubi.
Hell, K6BD take on incubus isn't too bad - seducing not so muh sexually but more Faustian, fanning on victim's selfishness and promising great power.
They (and succubi) overall work better as manipulators and power behind the throne than for direct confrontation with the party.
One doesn't even need to be a prettyboy, for all we know Grigori Rasputin could have been incubus playing royal family like a fiddle.

More correctly Incubus means "Male who lies on top." The root word is "cubare" which means "to lie down." "In-" means "on top or above," "Su-" means "below or beneath" and "Con-" means "beside or with." The "-us" is masculine, "-a" is feminine and "-i" is plural and "-in-" can be used as a diminutive.

If you really wanted to get into it the correct terminology would be something like:

Incubus - Male demon who sexually tops
Incuba - Female demon who sexually tops
Incubinus - Shota demon who sexually tops
Incubina - Loli demon who sexually tops
Incubi - Multiple demons who sexually top
Succubus - Male demon who sexually bottoms
Succuba - Female demon who sexually bottoms
Succubinus - Shota demon who sexually bottoms
Succubina - Loli demon who sexually bottoms
Succubi - Multiple demons that sexually bottom
Concubus - Male demon who has sex with others
Concuba - Female demon who has sex with others

I guess if we're following the rules for Latin conjugation the oft asked question of: What's the gender neutral term for a race of sexual demons?
The answer would be Concubum, given that -um is the Latin neuter nominalizing suffix. Which is oddly appropriate, funnily enough.
Also I really like this classification system and would definitely steal it, if I had something to use it for at the moment.
