So the coat of arms of Dune aren't really detailed, or simplified, or anything. Note how the coat of arms you're showing is drastically different form how it's portrayed in the recent movies, which in turn is radically different from that recent game, which in turn...
So the question should be why did the specific artist behind the coat of arms you're thinking of draw them so simplified, and to find the answer to that one... you'll just have to ask the artist.

Pretty much the only thing that's stayed consistent between every version is House Atreides having a hawk as their symbol. The Harkonnens were originally supposed to have a griffin, then it was a bull and in the current movies it's some weird pointy thing, which I guess is supposed to be a stylized depiction of their weird monochrome sun.

Yeah, it was shot with an infrared camera. They supposedly have a weird sun that only produces light in a very specific range of the spectrum or something (kind of like that old Green Lantern comic about the frog alien who has no concept of the color green). Apparently stars like that don't really exist but it's based on some outdated theory of what black holes were and they used it because it looked cool.

My headcanon is that it's actually some kind of large scale planetary shield system that filters the sun's radiation. There's an actual star called Prima Giedi (though some sources put the Harkonnens' homeworld in the Ophiucus system) that's similar to our sun except bigger and more luminous. Scientists think the amount of UV or other radiation makes it unlikely to have planets that sustain life, but maybe the Harkonnens or somebody else used terraformed it anyway as a vanity project during the boom years of colonization just to prove they could.

You're so close to understanding. Also: modern people think messy coats of arms that are historically authentic look ugly and retarded. Which they do, because their purpose was not to make you go "oh damn, look at THAT coolguy" but to tell you exactly who you were fighting or fighting alongside in a chaotic battlefield, a problem that I don't think exists in the Dune setting for the most part because while their combat is melee for handwave reasons their commos are not nearly so straitjacketed most of the time.

I expect they provided more utility to commanders and lieutenants, to figure out where each unit was located, and even that mostly before the battle, not during
I expect the soldiers mostly didn't give a shit beyond knowing their own banner, and in battle they just slashed anyone facing the wrong direction or yelling in the wrong language
and I find it really hard to believe your average soldier knew enough about the banners of their enemies to have an informed opinion
