In the 'Laundry' series of books about bureaucratic and Lovecraftian weird shit in the UK, the 'Dark Elves' have magic that would kill people who observe them in that way. They need to fight each other by luring their opponents into traps. IIRC humans figure out some kind of way to send artillery strikes without having to 'observe' the target in a way that triggers the spell, but it's not a slam dunk.

This works against force users who aren't clever, strong, powerful, or lucky enough to reach out with the force and just grab the bullet, or dodge its trajectory, or bat it aside with their saber.
Killing a jedi requires overwhelming their precognition and attention. A single threat that they are prepared for is the best possible scenario for them. Singular threats, over and over, one after another, are barely any better if they can recover from them between each threat.
For the best chance of killing a jedi, you need them to be constantly reacting, and you need to throw things at them fast enough to overcome their ability to react. Ideally you use these threats to herd them toward a final and inescapable danger.
The Trade Federation tried this in ep.1, they gassed the jedi and sent in droids to finish them off. They made the mistake of applying these pressures sequentially instead of simultaneously. It's a lot harder to escape poison gas when you're trying to dodge blasterfire.

Harry Potter wizards are worse off in nearly every regard, as we see their power tied solely to wands and the occasional artifact - and the only artifact we see used in anywhere even approaching a practical fashion is the invisibility cloak. If a wizard knew they were going to be shot at, a simple shielding spell would likely suffice. Taking them by surprise remains effective.
The issue with solving the problem of wizardkind with a sniper rifle is that wizards have a great deal many enchantments designed specifically around keeping mundanes from noticing them. If the location is unplottable, you cannot navigate to it or target it. If the area is enchanted to show a different reality, you cannot identify a target. If your eyes glaze over every time you try to focus them on a wizard, you cannot shoot them.

I blame it on the old Jedi Knight/Jedi Academy games, as much as I love them. Slug throwers in them couldn't be blocked the way blasters could and required really tight timing to properly push the scattershot away from you. It made them the go-to weapon to overwhelm scrub jedi just swinging their sabers recklessly but was easy to counter once you knew the game better.

Harry once had to explain to Ron's father what a gun is because wizards, especially "purebloods" that have been disconnected from muggle society for generations, often don't understand technology. There's a very high likelihood Voldemort doesn't even know what normal people are capable of.

I think it was to demonstrate how insular their community is. Characters like Luna or Draco come from generationally sequestered families, the former being a schizo that's somehow always right and the latter being so uppity that muggles and muggleborn are beneath them. The Weasleys live out in the middle of nowhere in a house that makes no architectural sense and rarely interact with anyone outside wizard circles. They use teleportation for logistics and often transportation. They never actually have to be in-touch to function. Hell even the ones born into those families without magic end up getting stuck somewhere nice and quiet where they never have to encounter muggles or technology like Filch.

also, my headcanon is American Wizards use guns as their spell foci and use handloaded cartridges filled with spell components to cast their spells. tradition is to use revolvers and shotguns because you can load each shell or cylinder with something specific in mind.
Typical American Wizard will easily be carrying 2 revolvers, a mossberg 500 and sawn-off shotguns

HK47 had an entire dialogue tree about killing Jedi in KOTOR2 and it was all very solid. Taking them by surprise or debilitating them before attacking is extremely useful but needs to be followed with decisive action. Gas & Flashbangs would only work for a few moments but even that was valuable when striking a killing blow. HK also stressed the importance of not overplanning because the more you plan the more likely the Jedi will pick up on it with their precognition.

Well yeah, that's the point I'm trying to make. Frankly I think droids being the best anti-Jedi weapon is probably a very wise narrative concept. The Force flows through all living things so a Droid is a natural countermeasure. It doesn't have emotions to tip off the Jedi's telepathy for example. The precognition is still a problem but that can possibly be confused or subverted.

He had Jango in AotC fight off Obi-Wan and later easily kills another Jedi master. He does get killed by the very best Jedi fighter, but his genes are specifically chosen as the template for an army of Jedi killing clones who kill like 99% of the Jedi. That's why you use them in conjunction with each other. The whole point of HK's monologue was that jedi are a tricky, dangerous foe where one has to exploit every possible weakness personal and general to take them down, not that they're easily dabbed-on chumps.
