The old man on the mountain that is the greatest human martial arts master in the world? The average elf has *at least* his level of training, though not necessarily his talent. It also just makes sense for Elves to invest in self defense, as the greatest risk to their lives are accident and surprise. Being martial arts masters makes things like random accidents much less likely to do them in, and makes them better equipped to handle surprise attacks or ambushes. So you think you're going to get the drop on an elf with a crossbow and they just catch the bolt out of the air and then do a wall-run into a flying kick in response. And this is an expected level of kung fu skill that every elf that isn't a child should be able to do.

There are *regularly* hordes of monsters living within sight of the city walls that they have to send people out to exterminate, anyone farming there would either be dead or a having needed to become a beefy badass just to survive and not get killed by giant toads or the like. Maybe they eat the monster meat that just sort of comes to them, maybe they subsist off of the yearly swarm of flying cabbages that people kill and eat, but the fact remains farming the surrounding area outside of the walls is very much not an option.
