What books do I read to learn about chess? I am 1000 elo but I dont really know any theory or anything. I only play like 1 opening every time too and I only know the first few moves

Pathetic, i could defeat everyone in that room with 10 tons of dynamite.

Soviet Chess Primer, Chess Fundamentals by Capablanca, and My System by Nimzowitsch will give you a very solid foundation.
But you will make the deepest and fastest progress by doing everything at once and taking things in by osmosis. You should be learning opening theory, watching the master game events online and listening to the commentators analyze the positions, reading pure chess history, and studying your games after you play rather than just spamming new game. All combined with reading rather than sequential to it, and the reading shouldn’t stop. Keep finding new books that interest you. Basically just immerse yourself in the world of chess and you will take in everything you need organically.

My favorite thing about learning and getting better is how easy it is.

I hate chess, I hate how it mocks me, I want to destroy chess, and so I practice chess, this miserable game reserved for the insane.

It’s character-building and intellectually rewarding to take on the challenge of being a good chess player, which I would say is above 2000 online. It’s a cool skill to have to be able to trounce anyone you meet who has a chess board in their house and be known as a “chess player” which comes with a little cred. It’s also rewarding to be able to follow along with the master games when you watch them live and not just guess by the eval bar and the commentary. But once you reach that milestone you should only be spectating, continuing to play is a waste of time.

Do you have self imposed rules like "if I lose 2 in a row I stop playing for the day"

Yes, but I ignore them.
