What power level do you like your humans and human kingdoms to be in your setting? What advantages/disadvantages do you like to give them in comparison with other races? What is their general role in the world?
Human kingdoms win with numbers. They aren't the most numerous (that'd be goblins and orcs who breed like rats, or maybe ratfolk and the like) but they are on the more numerous side. I prefer 2/3d to 3/4th the kingdoms in the setting to be human kingdoms. Dwarf kingdoms are the second most common, usually in the hills and mountains. Then here or there a beholder kingdom, a goblin kingdom, etc.
Compared to races like Dwarves and Elves Humans breed and mature much faster so I made the Human nations be just much more populous.

Elves are half-spiritual beings, so they live in their own world. There is of course conflict, but not this weird grand racial genocidal conflict. Humans appreciate Elves, like to give their children names, that reference them, just like the Germanics in our world did. Elves on the other hand can be mischiveous, dangerous, but don't have this melancholic "ugh, Humans are eventually going to kill us all by chopping our trees".Humans are diverse enough that you don't need so many fantasy races. Humans win through technology.Dwarves and Elves culture stagnate because they reinforce tradition without innovation.Guns don't kill people, humans do. But also humans with guns can kill the shit out of everything.
