How I classify is more or less like this:
Ogres and Trolls, they are in what my setting are called Gogs or Magogs, basically beastly, big and strong, not so smart, magogs (like trolls or onis) are also powerful in magic, but not so smart, they are rare and a threat individually to small homesteads/villages.
Orcs are what I classify as Trogs(Than also classify other predatory humanoids, like neanderthals based in the predator theory, wich I love), aka, beastly humanoids, less intelligent than humans but more than chimps, than are strong and form tribes, they are the bread and butter of the frontier parts enemies, they are raiders and such, dangerous in the night, less so in the sun and open fields vs cavalry (they can't use javelins or bows, crossbows and some other yeah), incidentally Dwarfs are classified as Trogs, tough the more inteliggent ones.
Goblins, they are a kind of common fey, like the Dogs of the Fey world, very varied, dumber than humans but smarter than Trogs, I use them when I need a more trickster/tricky kinds of numerous foe,the bigger ones are the Hobgoblins, and there are some bigger, more magical races than I guess are like the Bugbear, but I mainly take WoW Trolls for inspo for them cruel, vindicative, weird voodo like magic.
Uruks I don't have an equivalent, tough some titan lords (like the fey) use enhanced orcs or hob for war.

In my setting it goes a little like this:

I don't know, I don't really like it myself. I feel like Orcs and Hobgoblins largely fill the same roll, and Bugbears can be replaced by either orcs/hobs or ogres. Ogres also have some crossover with trolls I think, unless you're taking a more eastern approach with Ogres as Oni. And the list doesn't mention hill giants either, who also feel like bigger ogres. Ultimately I think that the venn diagram of the different races has a lot of crossover that isn't necessarily bad but also isn't very distinct or interesting. As is typical for DnD, the system would probably be better served by narrowing things down and actually flushing them out rather than just being a kitchen sink; at least as far as the monster manual goes. Kinda weird to have a monster manual that is non-setting specific.

the out of universe reason is that when they were making the first monster manual, they were just plucking words out of mythology and literature to use and they werent exactly picky about what they included and they certainly werent thinking about whether or not any of them would be rendered redundant after 20 years of adding new entries

since hobgoblin was just an extra syllable away from goblin, it made sense to make them related

orcs and goblins were born from a misreading of LOTR, where goblin was another word for orc but most casual readers dont pick up on this and gygax admitted he though LOTR was mid and likely didnt read too much into it
so orcs are just a renamed uruk, a bigger and stronger green/grey skin, while goblins are the smaller more numerous one
as a departure from tolkien, the first orcs in DnD were described as being a cross between a feral hog and a wolf

In Tolkien's mythos Goblin was just another word for Orc, the Hobbit just uses the term because children couldn't imagine how an orc looks like. They are the same species, the words just have different historical backgrounds in Middle Earth. Uruk is also another term for Orc, though in the story it was colloquially used for strong Orcs or the Orcs that resulted from forced breeding with. Humans. Similar thing with hobgoblin, in the Hobbit it was a term for the stronger Orcs.
Trolls are a completelly different Species in LOTR. They are much larger and stronger than orcs. Orc types could vary too, some Orcs were indeed ranging from something as small as what we imagine a non-tolkien related Goblin to be (hence why Frodo and Sam could disguise themselves as orcs) to small human sized.

As for generic fantasy. No setting uses Uruk outside the Tolkien mythos as the term is property of the Tolkien Estate. Orc usually refers to the human sized Orcs or the more troll like orcs (likw World of Warcraft), but I can't think of a setting where both archetype exist. Settings where orcs are the inhumanely large, brutish creatures also usually do not feature trolls as the archetype is already filled by the Orc (WoW has, but the trolls are something completelly different there). In Japanese Stories Orcs are also oftentimes depicted as pigmen (like the ones in minecraft).
Goblins are usually the small green creatures. Hobgoblin doesn't really get used outside of Japanese Light Novels where it refers to large Goblins that basically fullfill the Troll/large Orc function.
Ogres are basically trolls, only difference is that they are just rooted in Western European, especially French mythology while Trolls come from Norse mythology. Trolls also tend to be more varied as it can refer to the brutes like in LOTR or something smaller (Scandinavian mythologies are inconsistent on that and it varies between country), but ogre always refers to something very large.

Unlike orcs and goblins these "greenskins" are orange. They are similar to orcs but live in more disciplined societies. They are not quite as physically large or strong, but still bigger and stronger than men. They have a more rigid caste system, with every member having their place and rulership is hereditary. They are called Orange Orcs by many human scholars who simply classify them the way humans of different races are.

They have a deep red skin tone and allegedly have a seaborne civilisation, but a true homeland is theorised to be over the seas.
