Also adding 1 doesn't have the same scale of increase, you know, going from 100 to 101 and from like 16 to 17.

Ok so you tell me how 1-18 works and try to explain why 1-100 would be better.

Because 1-18 is supposed to be a metric where adding 1 within the range is somewhat significant and the numbers don't represent a linear progression, going from 10 to 11 doesn't represent the same increase as 5 to 6 or 16 to 17 even though they're all a difference of 1.

18 is the highest you could reach in most statistics in the course of normal play in ADnD
the PHB tables for all stats top out at 18 for the purposes of character generation with the exceptions being STR and INT

INT only has a bonus for reaching 19, 20 or higher is possible but grants no further bonuses
STR maxes out at 18, with further STR going to a separate exceptional bonus
gygax has said that the reason he didnt want STR to just keep going past 18 was because he wanted there to be diminishing returns past the normal ceiling
it basically existed as fluff, because exceptional strength only mattered in increments of 50

as to why 18 was the limit and not a round number like 20, its because you rolled 3d6 for your stats
the DMG lists several different methods to use that generate higher or lower averages, but all of them are 3d6 based
similar to the reasoning behind exceptional strength instead of allowing the stat to continue indefinitely, its because gygax wanted a bell-curve distribution of stats
with most of your stats being 10s, with at least one stat being above average for your prime ability and one below average to make your character more interesting
there was a small chance to be superhuman or sub-human in every ability, but this would be rare enough that you could just tell them to re-roll without issue
