It's a story for pre-teens that then had to try and transition to be a story for actual teenagers but it still had all the setting baggage of the story for pre-teens so it didn't work out great.
Also the fact that you can't find someone in an invisibility cloak is a major plot element for the first like five books, culminating in it being one of the big artifacts in the underlying morality tale with its specific effect being a major element of said tale, then suddenly towards the end of the series, there's a spell that reveals it automatically when cast and everyone knows it.

The more specific answer is that the game has no time limit or endstate besides the snitch.
It'd be one thing if the snitch was just a weird bonus, and most games simply ended by just whichever team had scored more goals within an hour.

But instead like >>98600825 pointed out a Quidditch game can last for weeks. The snitch being worth 15 goals is a lot, but wouldn't be unworkable in a game with a time limit.
But because the snitch is the only way to end a game, it means that unless a team is so much better that they can maintain a 150+ point lead, the rest of the match barely matters. And as it stands, if both seekers get injured by a bludger and neither team has any substitute players, the game cannot end at all.

Wizards need to eat, drink, and sleep. Therefore, for the rules to add up, the game would have a time limit in order to accommodate such concerns.

nta, the other thing is that JK Rowling has admitted that the game’s setup is specifically set up to give Harry big spotlight “comeback from behind game winning” moments for the sake of her book. As an actual sport, the scoring system itself is superfluous and only there to build up the dramatic tension, it’d have the same effect if you cut out everyone but the seekers and optionally the blockers, with the seeker catching the snitch a single time as the winning game state and maybe had blockers to stall their progress.

Granted, as pointed out, if there was a time limit, having a scoring system would make sense as a safer alternative method to winning. But with both victory and the end game state effectively contingent on the snitch being caught, you might as well strip all the other elements out. Quidditch is a retarded sport by design, it’s a game meant to make feel-good moments for Harry Potter have underdog victories. But you can’t have a sport specifically built around that. It’s emblematic of a lot of the issues of HP’s writing, the story and setting exist to cater to the demands of Harry Potter rather than him existing in it.

It's the sort of thing where simply reducing the impact of it would probably be enough. If the snitch was only worth 30-50 points, then it's basically just a handful of goals. That's still enough where Harry can still score the match point, but it still requires that the rest of his team is only behind a little.
Either way, adding a time limit just means that there's an straightforward answer for how games end otherwise. Even if Harry catches the snitch every game, that could just be used to reinforce that he's a great seeker, because other characters would highlight how less than half of all games even have the snitch caught.

The setting catering to Harry is certainly a big problem, and part of why it's never struck me as particularly good for tabletop.

I find it amusing how Harry Potter is heavily implied to be the Antichrist in Alan Moore's The League of Extraordinary Gentlemen ("Century" to be precise). Part of his a criticism of Harry Potter being derivative, borrow heavily from older, often superior literature, strip away the nuance, and package the result as something revolutionary. He also pointed out that Harry didn't actually "earn" any of his victories. He is created by mashing together pieces of Susan Cooper’s The Dark Is Rising sequence (Will Stanton), Aleister Crowley's occult writings (Moonchild), and various 20th-century boarding school stories. His chosen-one status, his magical tools, and his victories were all manufactured setups.
