Just use PF1e, dude. It does the fixing you're looking for. If you want those old shitty PrCs, you can just allow them as options for your players because PF1e is completely backwards compatible with those. No one will choose to take levels in them, though.

This: Asking an LLM to generate a stat block will have it generate a stat and then forget it and bluff another value for that stat when referring to it later on. They are very poor at maths, especially when 3 or more variables are involved.

Using it to generate descriptions of valuable items on-the-spot instead of gold pieces / credits / what-have-you? Sure. Using it to generate an opposition? Kill yourself.

Fully fleshed out KotBL to start. The campaign as a whole is a sandbox although there might be hooks for one or two session adventures that lean a bit more railroady, you will have to (both literally or figuratively) explore the sandbox to find most of those though.
I will not giving a ton of info to the players about how the system is working, in a super old school style. Players still roll and have a sheet but you will not know everything that is going on in the rules.
It will probably be rather lethal if you don't take things slow
THIS IS NOT 5e OR ANYTHING CLOSE, if you come in assuming that it is like 5e you will be wrong.
The game has been going for a few months now, players adding and dropping as time has gone by (more have added than have dropped). The game is just getting into the meat and potatoes of things though. We have had enough character deaths recently that the average level has dropped and there are a few level ones again.

They are bad at math because they aren't doing math. They're language models, anon. To be pedantic, they're natural language models, not formal language models. They do not actually construct and track and manage variables or relationships between symbols in a static manner. They're constructing each response to your prompt from a compressed context window.

And furthermore... Copying is not theft. Stealing a thing leaves one less left. Copying it makes one thing more. That's what copying's for.
If people want to get paid for their art, they shouldn't just give it away to the universe for free. They can't complain about their foolishness after the fact only because they're embarrassed to realize that their work had value. If they want to reorganize society and economic systems to ensure they get compensated for their work, they can try to do so, but that's also a fucking stupid waste of time since it hasn't worked for all the centuries while people far smarter and wiser than they have tried. Street lamp lighters used to be an entire vocation. "Calculators" literally were humans who sat in a room for hours in groups of dozens or even hundreds and just did arithmetic. For a living. Lots of things people used to do for a living are no longer things people do for a living. When the photograph was invented, most artists at the time were immediately unemployed because they were portraitists.
Take reality into account. What you do for rent money is not who you are. Don't attach your meaning to some stupid fucking thing you do for fucking money, kids. Otherwise, don't fucking complain about it when change happens and your stupid fucking artificial identity is invalidated.

Yes and no, on one hand you're right that people bitching about this shit are stupid and their jobs/careers being replaces is a natural consequence of the technological progress of civilization, specially when just a decade ago, these same people were thinking that AI would take over menial work, meaning they would be free for more creative pursuits, meaning more art, more fanfics, etc. The absolute morons.

On the other AI literally breaks down if it has no new shit to copy, it's called model collapse, if you feed AI created stuff to AI, you get the same result as if you were photocopying a photocopy, gathering more and more imperfections for every pass, until the photocopy becomes useless. You cannot read the text, or distinguish the image, etc. Same thing happens with AI, so artists and writers are still safe from unemployment.

All art is derivative. "Model collapse" is just what art has always done: it's a feedback loop evolving. The difference is that AIs iterate through that loop a lot faster than humans do.
Present today's art to a mudfarming peasant in 500 BC and they'll tell you it's incomprehensible garbage. Because the meaning / value of art is relative to its contextual culture.
Iterate an AI's training data set with feedback from users and you prevent model collapse. Synthetic training data generation is literally this and it works just fine. Even when there are no humans in the loop: you can have two opposed AIs providing feedback to each other during training, with nothing but abstract instructions about how they should be judging each other in the process.

Until then, however, I'll have to console myself with the established consensus so hard won after more than a century of philosophers and artists working hard to understand this topic and the conclusions they've arrived at which are now, to the astonishment of literally everyone working in the field, actually no longer controversial.
Photography is just as much art as anything else can be: because art is a made up concept. It's arbitrary. It's not real. It's literally just whatever you want. Aiming at the dead center of the Venn diagram of public agreement is fucking boring, and a shitty way to self-validate.
You don't have to agree with anyone else about what is or isn't art. Because what you think art is or isn't literally does not matter to anyone but yourself.
No one's trying to convince you of anything about AI.
You're just being told that you're limited. There's a boundary around what you can assert, and it's fundamentally not possible for you to define the validity of someone else's subjective judgement.

If you can find a way to argue your way around that, present it to the world. Several international prizes for philosophy await you, to the tune of dozens of millions of dollars and permanent acclaim in the history books.
