Is jar jar correct? Are the dice important in an RPG? Or should you fudge the results to save the players for the sake of the "story"?

That said yes, not knowing what is going to happen is supposed to be the point for everyone at the table, that's why you throw dice and have rules to judge the results.

How do you handle games with paralysis status effects? Or times where the character is at 0hp and you have no healing left?

Depends on system, tone and the situation during play. I was referring more to character death than paralysis, for starters, you usually have a way out of that one. You don't in case you die.

Is it a high lethality system where life is cheap, PCs are even cheaper and every player has a couple of spares ready? Well if you die, you die. Say goodbye to hopes and dreams.

You had bad luck with a few rolls in a row with sound tactics in a heroic fantasy session in the mid of the dungeon? Unless you got critted out of your HP pool so badly you exploded, someone is bound to stop you from bleeding out or whatever. This may involve you owing a favour to someone or something down the line.

The answer is Yesn't.

You can take two different approaches as a GM, you can either let the math rocks choose everything, or you can put your finger on the scale from time to time. If you're letting the math rocks choose, you let that fucker die. if you're putting your finger on the scale, they survive, incredibly, against the odds. and you move on with your day.

That being said, this is something you communicate to your players on session zero. You tell your players your characters can dies in this setting, so plan accordingly. and then if they minmax to the point a stray arrow can kill them, that's on them.

My own GM has a rule, You can die, but you're not gonna die in a ditch, we're gonna make your death as glorious as possible. People do not care then because when they die for reals, they die like a badass.
