How much self-doubt should paladin characters have?

Paladins should have conviction and a maintain a strong sense of higher duty.

A paladin should have self-awareness. Just enough self-awareness to make sure that when they fall, they do so wholeheartedly and irreversibly. And if they don't fall, then this level of tension will make them a very interesting character as they struggle with their moral code so that they don't fall.

According to what metric?

The ideal Paladin should have no self-doubt whatsoever, according to the Paladin archetype and Paladin principles and alignment. He should epitomize Lawful Good at a cosmic level, with unerring clarity.

As a character? Well that depends on the character. There is no "should" at all; people are what they are. Some will be plagued by self-reflection and self-doubt, second-guessing themselves at every turn. Others will always question and test their ideals and the tenets they have been taught, even if they are sure of themselves, if only to always reinforce and recommit to their faith. Others may be simple-minded and single-minded.

Not to the character, and, likely, not to the people judging them, either. Intent tends to matter when it comes to arbitration.

Generally little. Knowing what your god expects of you is a requirement to qualify for being a paladin. Falling as a paladin is not meant to be an accident made when you misunderstood what your god expected; someone who would make that kind of accident would never have qualified to be a paladin. So if we take as a given that paladins know what they should be doing, then the only way for them to fall is to choose not to do it anyway.

In matters not relating to morality though, self-doubt is totally fine. You could have a paladin who is thoroughly unsure of himself in all matters except faith.

That's literally the point of playing paladin. Your whole character is about how they view faith. Your core options are:
>extreme denial and always on the edge of a cliff while outwardly appearing resolute in their faith
>constantly at war inside
>actually self-assured and self-aware that their belief is expressed through choice and action and not so shallow as to fall apart over something as basic as a moral dilemma or a trolley problem.

So basically it's just a matter of maturity which of these they're closest to. First is extreme immaturity, second is someone in the process of growing, third is a self-actualized person. And your entire character concept as a paladin is to be in one of these and acting in one of these. And they affect your party members. If you're the first then you are a liability and a danger to them, someone to watch out for, if you're the second you need them to help you through your inner conflict, and if you're the third you're the party grandpa dispensing advice and acting swiftly.
