I actually had an idea for an underground civilization breeding moles for size to use as livestock. Occasionally some would escape and become feral, leading to dangerous sheep or pig-sized "diremoles" (essentially a wild boar that can tunnel underground) that serve as a straightforward low to mid-level monster encounter.
