I went to San Cristobal hill (lots of neat stuff + cable car to the top), cenco costanera (largest mall in south america), went on a wine tour at cousiño macul vineyard, the precolombian museum, and walked around the plaza de armas of course. Lots of people recommended I go to the bahai temple which is supposed to be really cool and have the best view of the city, but I didn't have time for it.
