Every day construction workers come to eat at an outdoor canteen near my home. I watch the canteen prepare the food in squatter conditions in an abandoned lot behind their stall. I used to live and work in Boracay for a period of 5 months. Worked in the tourism/nightlife industry (as a foreigner).
