the easiest way is likely to fly to Turkey today, you should have 60 days visa free entry

then apply for asylum in the EU
this only works properly if you have a public trail of being politically prosecuted

the alternative option
is to apply for a blue card, or green card, or working visa somewhere else like UAE or saudi arabia
that requires you to have a master degree or PhD (in some relevant field)
if you're fine with / accept a kinda bad paid job (like just a few percent below industry average), you should be able to get a job within that 60 days
otherwise you need to do some visa hopping

I guess you could also do digital nomading
but almost impossible to get into today if you're not already doing it

first of all, European agencies communicated with Ukraine, so they quickly know you're not a citizen
secondly even if you make it through the Mediterranean without getting shot at by an EU paid tunesian coast guard to rammed by FRONTEX
you will get detained in a "refugee camp", which basically is just a shitty open air prison for weeks or months (who knows)
and the most likely option is that they let you rot there or find our you're Russian and send you back
on the very slim chance you get asylum like this, you'll be a second class person and seethe as poorfag where ever you might be sent
