What are some countries for a recently unemployed American to go to for a month for some good hiking/scenery and good food?Thinking about New Zealand, Chile/Argentina, Spain, Germany, American Samoa or somewhere else? What do you think?

Food close to the mountains are mostly stews or heavily based on meats. If you're a vegan you are out of luck. There are a couple of desert areas in the main plateau (Tabernas) and close to the southern coast (Almeria).You could try "El camino de santiago", there are several routes, the people I know they've walked it usually used about three weeks.Whatever you do, take some time in planning, permits and insurance.
