I've never been to these states (Except Las Vegas) which would you recommend for a hiking/camping trip? I'm planning roughly 3 to 5 days sometime next year

The southern ones are a completely different vibes from the northern ones

If you like desert vibes, fly into Las Vegas and you have access to Zion, Grand Canyon, and Death Valley, among other great parks, relatively nearby.
If you want more greenery, just go to Yellowstone

I don't know if I will have days off in the summer or winter. If it's winter I was thinking more southern towards Sedona Arizona or Zion National Park. If it's summer I wanted to go in the northern US rockies somewhere. But I'm open to either.

Driving from Vegas to SLC you pass a lot of National Parks for camping. Depends on your experience levels too, whether you actually wanna hike into a backcountry campsite or sleep in a tent next to your car.

colorado is ezmode for camping
montana is really cool but you cannot fuck around when it comes to brown bears
teton national park is kino but it's also tourist heavy.
