Pokemon Scarlet and Violet is literally this, it just looks ugly and runs like ass (Switch 2 fixes the latter aspect too). But it is this exact feel, the open world Pokemon game where you have no boundaries.

Not at all. Palworld overall has a parody vibe, a lot of putting your pals to work in the factory. It can be comfy at times, but it isn't the same.
Pokemon has a lot of appeal in the quiet, slow adventure angle that Gamefreak refuses to use.

This is retarded, I want the boundaries. I wanna go to the first town and not be able to leave till i have done some arbitrary nonsense, I wanna be stuck in areas till i fight the evil team. I like having the map slowly open up as I progress through the game and then finally once I have beaten it, i can explore the world. Its like a fun reward and having limits like that lets them add more detailed set pieces to the world, what makes pokemon, pokemon is the adventure, not the "open world feeling of freedom" It never has been about that. This is why scarlett and violet sucked and didnt hold many players, this is why despite being pretty shit and being the first game suffering from dexcut, sword and shield were amazing(minus the wild area)

That happens with a lot of games that focus on exploring large regions or magical worlds and suddenly you come across an impassable barrier. It makes you want to see what's beyond the hills even more.
I always wanted to know what was north of kanto and johto even if it'd have been more of the same.

As for the anime, I think the original staff would agree with you. The movie credits used to have so much effort put into shots of vast landscaes with the trio just walking or contemplating the scenery. Even the original jp song was about traveling by foot alongside the wind.
