Katanas are just oversized kitchen knives while western swords are just sharpened clubs. So if you want to depict something that "cuts" it's always better to choose the kitchen knife than the metal club.
Meanwhile nobody likes to use central asian weapons because it summons the dreaded saaaaars.

It could be argued that sabers went through convergent evolution like archery but it is safe to say that pretty much everyone in the world agreed that a 2'-3' single edged blade with a mild curve was the meta for a LONG TIME before guns truly got gud.

Warfare wise sabres are a worldwide meta when it comes to swordfighting, they're by far the most efficient blade standard out there which is why even to this day the various ceremonial swords for armed forces in Europe are overwhelmingly sabres rather than straight swords.
The closest straight swords got to the actual warfare meta was the short lived era of basket hilt swords like the schiavona which saw extensive use in various european wars before being supplanted by guns (and sabres).
Romans basically hardcarried straight swords in the early meta thanks to the pugio which only really worked out because it was a short sword paired with a fuckhuge shield, so basically a handheld spear or a big dagger depending on how you look at it, but as time went by people realized that when it comes to long blades curved swords are simply better in actual warfare.
