I don’t understand how a mass murderer who killed his own family (which includes all the demigods and gods hes related to) managed to somehow turn into this stoic, morally self-righteous dude who lectures everyone on needing to be better.

To be fair that's not bad writing, the bad writing is that it's taken seriously.

People do this shit all the time. They'll do horrendous things, they'll sell hard drugs, they'll kidnap, murder and so on and then later in life they decide to constantly talk about doing better. It's a way to justify why they get to continue living despite their actions.
They justify themselves because now they get to tell others to stop, if they pay for their actions then they can't tell others to stop in the future. They can't influence theoretical people. They're martyring themselves to a life with "shame" so that others don't do what they did.

It's all bullshit but it's a larp they have to hold up to justify themselves. Everyone knows that at a certain point in a just world, a person just forfeits their life. This larp is what happens when the system isn't just and they're not willing to enact justice upon themselves.

I don't have a problem with the "monster reforms and feels the need to warn others away from his path" archetype because it's almost always an entertaining character, but young kratos' violence is almost slapstick and stuff like old kratos somberly remembering that time he killed the gag character who exists to be killed by kratos for no reason feels borderline comedic
