The only way to make Skyrim playable is to ignore crafting completely. Otherwise you can just powerlevel in the early game, make yourself the best gear in the game and render all the game's loot totally irrelevant by the midgame meaning the only thing to keep you playing is the barebones combat where you just kill everything in one hit and never die.

The games loot is largely irrelevant anyway.
You need exactly 2 drops.
1 mehrunes razor. Strongest dagger in the game. Found through a quest that drops in your lap.
2 dark brotherhood special armor set you get as a bonus reward or can just find.
Then the dagger perk for 15x sneak attack damage with the dagger.
This combines with the armour for a 30x sneak attack damage with daggers.
You can now one shot anything in the game even without smithing to upgrade mehrunes razor.
Nothing else matters and you will easily out damage stealth archers in moments.

You either use transmute on iron ore and make a ton of gold rings or you make a ton of dwarven bows using dwarven scrap. That's for smithing. Enchanting is super easy to get to 100 using the cheapest soul gems on expensive enchantments and by disemchanting everything. Alchemy you just need to make expensive potions while wearing fortify alchemy gear. It's easy to find ingredients.

The game's economy is busted. If you enchant crafted items they'll be worth more than the materials you bought to create them, creating a positive feedback loop. Same is true of potions - high value potions allow you to immediately resell them to recoup the money you spent buying all the achemist's ingredients and leave you with a profit. You don't even have to do the inventory reset exploit to power level this way, even if you let NPC inventories reset naturally it will still allow you to easily gives yourself piles of money and level your crafting skills quickly.

Tainted Grail, but to be fair, that only came out recently. It took over a decade for a better dungeon crawler to come along than Skyrim, unless you count Fallout 4, but that was made by the same people.

If the pacing is your problem then there's a mod to fix that by breaking up the quests so you can justify doing the side quests.
