The game is plenty fun without mods and the current version of special edition is stable enough that you probably won't encounter a crash during normal play.If you're using keyboard and mouse, I recommend adding SkyUI though. The vanilla UI is designed to show off 3D models and be controller-friendly (which it really fails at anyway) rather than be useful and efficient. You'll need the Skyrim Script Extender for that, as well as most other mods. Other than that, I would wait until you play some and figure out what you'd like to change about the game. Some people like adding survival mods, more spells, or going all out with combat animation overhauls and shit like that to make it feel more like Dark Souls or whatever. I don't really feel like most of those are "necessary" though.

The unofficial patch so you don't crash every 5 seconds is basically all you need for a first playthrough
