You don't HAVE to do world intel, but you're really gimping yourself and skipping a lot of stuff if you do decide to skip it. You can just follow the main quest objectives if that's what you really want to do. Queen's Blood is super fucking fun, but a lot of people choose to skip it, so you're not required to play it. If you skip so many mechanics and sections, then it doesn't even seem like it's worth playing if everything about the game bothers you.

Some yes. Each area has materia you buy from chadley with the chadley points. You don't need to 100% everything to get what you need, like for example the first area sells 2 morph materias but you only need one
Chadley/World Intel has alot of the fun materia behind him, so not really.

Lot of character specific side quests have great content, like Condor feeding, Nibelheim Tifa cat quest, Nibelheim basement monster quest with Vincent being guest in it.I recommend leaving 100%ing after clearing the story and Gilgamesh too, because Gilgamesh quest requires you to fight double summons and then the man himself and the game expects you to be higher than lowest story clear.
