I said it a week or two ago though, but it has changed a lot since early access 2.5 years ago, and largely for the better I think. I'm on the snowy area of the game now (third map). If comparing to skyrim, the melee combat feels a lot better, and skill points and attributes can have a legitimately meaningful impact. I'm still a boring 2h bonk player, but there seems to be a lot of different spells including a number of summons, so magic could be interesting to try. It doesn't have the same sandbox feel and quirkiness of elder scrolls, but I do enjoy the overall tone of the game.

Search for easy starts and work your way up from there. Also Vladislav of Bohemia is pretty underrated i'd say, if you search for easy starts in CK3. Also if iirc CK3 is the most playable with just the base game, the main expansions are optional i'm, not gonna lie, they add a lot of content, depending on who or where you want to play.
