I'm playing an enchanter right now and while the shield maze was a fucking nightmare with essentially a dead weight character, I just unlocked second level spells and its like my influence in fights more than tripled.
Not sure who I'm gonna romance, though I do regret taking Lann instead of wendy

My favorite overall build is crusader cleric when going angel because ever since the merged spellbook rework prepared casters merge slightly better than spontaneous casters. You use the crusader feats to get the shield bash line of feats along with two weapon fighting and get heavy mythic armor and then supplement that with completely busted merged angel casting. Can even pick up an animal companion if you want. The character just does pretty much everything while fulfilling the fantasy of being a sword and board heavy armor dude.

My second favorite build is enchantment/illusion wizard demon. There's a couple of ways to split it up, if I don't bend over for Nocticula and get her gift I like 20 levels in shadowcaster a lot because you get 5 profane INT from it. Failing that just pick 10 levels in the wizard you like the most and make the other 10 levels in loremaster. This is my favorite build to replay the game with because I just solo act 4 with it and abuse the movement speed buffs from wizard and the free teleport of demon to just zoom around the Abyss in record time. Makes it a lot more bearable.

I can't really imagine playing something that doesn't have full spellcasting progression.

I liked Magic Deceiver Azata throwing double Chain Lightnings and turning entire screens of enemies into dogs. I also really liked Eldrtich Archer Azata into Devil with the cantrip Hellfire Ray, you get to keep Zippy Magic so you're blasting two niggas at once every turn.

Gish build Lich is pretty fun. You don't even necessarily need the int bardiche, just need to be able to cast hungry flesh domain with decent rolls and destroy everything.

As for romance there's not really a super traditional chick to date. There's a catch with all of them and it boils down to what bugs you the least. I really like most of them as characters, though.

I would try to go blind as much as possible desu, even with romances. I'll say this often things are more than meets the eye so do consider it.
Go wherever your heart follows.
IF you think your build is ASS you can respec your character. If you think it would be role play inappropriate it does actually makes sense but the reveal is a gigantic spoiler which comes up a little late so I won't tell much further than this, you can also just reset and do things over again while skipping dialogue which surprisingly hastens things up greatly.
Although my one advice for you would be to learn how the ac and dc stuff work, otherwise you might need to get creative in a way that doesn't seem right.

Multiclassing was a mistake and floats every game it's in. There is no reason why a paladin should be able to get wizard powers other than people being butthurt that a class has a thing they want.
