In Persona your dialogue options are very brief lines and the player character might even only speak as much as once per scene, which is understandable because if you're not going to be saying much more than 'Yeah' or 'Let's do it!' there's no point in constantly interrupting the dialogue for it.I think it's fine to have the protagonist be a self-insert to a degree where you choose their dialogue, but I think the protagonist should still speak on their own often enough. P5 seemed like it was going to do that at first because Joker speaks more than the other protagonists in the very opening but then they kind of drop it. Metaphor is closer to what I'd want because Will speaks often enough, but ideally I think they should speak even more than that.
