You are suppose to spam your shield and doge. After the enemy gets done with their attack string get 1-2 attacks in then repeat. This game combat utter shit. You also have to have buffs up permanently and equip enemies weaknesses so they are not even more aids

Literally just dodge the arrows, the ability to deflect arrows is also totally not needed. Hell you can just roll past arrows you do not actually need to use the dodge move itself. Besides that my advice would be to always focus down archers in every battle first. Chances are your getting sniped from afar when your not paying attention most of the time. Also never parry enemies in melee when there is an archer around, the animation locks you out of dodging or rolling so you will get hit by an arrow during it. Really parrying is something you should just not do in general even though it looks cool.

The combat and overall gameplay is insanely hampered by the absolutely godawful levelling system and just the whole unpolished nature of the combat, only getting a more solid feel in the DLCs, BUT I have NO CLUE what you're talking about with getting one shot. For me I spent most of my playthroughs desperately trying not to outlevel everything. I wanted to wear the cool armour, but I'd do a main quest sequence and come out the other end having gained like five levels.
Why is armor level locked anyway? It barely fucking does anything anyway. If I go out collecting these armour pieces, then shouldn't I be rewarded by getting to wear them at that time? And why can't I lower the hood? Actually, why do I have to wait until the game is basically over to wear a hood? Why is there ONE hood? This game has so much bullshit in it besides the garbage levelling system that could have been fixed SO EASILY.
Btw the B&W upgrade system is the most underwhelming shit I've ever experienced. Mind blowingly stupid system.

I have avoided talking about this game online for fifteen years, but every single time I do people act like this. I have no explanation.
That being said, I don't understand why killing monsters for money isn't your main source of income. Like, it's right there, they put the work in to add all these vanilla type monster quests, but you still make the bulk of your money by being a loot goblin peddling what feels like trash items

Dude I never used signs for anything but immersion purposes, and thunderbolt is(besides being blatantly awful game design) just a quality of life thing. I used sword oils for certain enemy types, but even then it was never because I needed it, it was because it was kind of fun to do. The game has so many issues, but being hard is not on the list.

I can't remember at what difficulty I started the game on, either normal or hard, but few hours in I did the quest in the mine with the zombies which were about 10 levels above me, and got to the room where you face 4 of them.
The game told me to run away but I couldn't because the controls were so ass that I kept getting aggroed and Geralt wouldn't run. It took me about ten attempts to slowly dwindle their health down and avoid being softlocked there.
Then I got to the boss and the second phase is just him spamming those guys.
All this blogpost just to say I dropped this shit game right there, fucking hell what a let down, and I liked 1 and 2 a lot.
