as a spaniard who had to read don quijote at school I never really understood the hype behind it
imagine if the greatest work of "literature" of the US is the GTA V story mode

In context of Limbus, the devs picked classic/well known literature from different countries and then gave main characters names from those books, while also using them as inspiration for cast's backstories.
There's Ishmael (Moby Dick), Gregor (Metamorphosis), Heathcliff (Wuthering Heights), etc. Don Quixote fits in well.
...As for why the book is well regarded, it's one of the first modern novels which got widespread translations to different languages, and was also reasons copyright system started being applied to translations of fiction. It's quite important.

I just fucking hated how quijote is not part of the story for roughly half the book, because the author loves to insert literally who characters and their side stories

The book had a much larger impact when it was written due to the culture surrounding it. It was a deconstruction of the popular media tropes of its time. With it's times societal criticism thrown in.

It was Chivalry Evangelion. So of course it will seem mid to us living in the future so far removed from it's cultural context.
