Deku Tree is a given, then Impa literally tells you to meet the gorons and shows you where Death Mountain is.
After that it I think you "only" have Navi and hat glowing map point.

For side content it is really is about talking with characters and the wisdom stones. Or your friends, I didn't find the Biggoron Sword quest, a friend told me about it in recess.

The quest deliberately throws absurd misinfo at you to throw you off from properly figuring it out naturally. For example, it would be natural to at some point suspect that giving a letter to the postman might be what he needs to solve his problems, however, every other time in the game when you're expected to give an item to an NPC, the item prompt pops up during dialog with them, so the game normally makes it clear whether or not an NPC is willing to accept an item which is a horrible design choice compared to OoT, where you're never completely sure if an NPC will make a trade, which is much more interesting because it means any NPC might be tradable and you can't rule this out.
The postman is the SOLE exception, where his prompt will ONLY show up if you ALREADY have the item on your person, which NO OTHER NPC in the game does. This is absurd misdirection, as you have to go through the whole quest again just to see if it's possible to give him the letter, which he gives every indication he won't receive beforehand.

From memory, when I was a small child the only thing that wasn't immediately obvious to me was getting saria's song and playing it for Darunia but I think I missed a hint.
Nevertheless, not knowing led to me adventuring around a lot during the kid portion of the game, getting the song from the lost woods just from running around and then eventually playing that on the rug.

Other than that, my own mistake, I don't remember my directions in the game ever being unclear.

When I played oot3d years ago I did the fire temple last because I couldn't figure out how to get in
I knew about bombing the rolling goron in the past but I must've missed every single attempt in the future because I thought that didn't do anything
I also never found the fire arrows and had to shoot regular arrows through a torch in a couple dungeons and managed to skip an upgrade required for the final dungeon, don't remember what. I thought I was cheating for sure so I even looked online AFTER to see if that's how I was supposed to do it (it wasn't)

Overall I'm glad it didn't hold my hand the entire time and let me figure out what to do, even if navi was telling me about death mountain the entire time

I feel that. To OoT's credit, the design of it was intuitive enough to mostly grasp what they intended for you to do but a few points required actual reading comprehension, which I didn't have at the time.
