I think Sephiroth says something about how these alternate timelines dont last long. Its like they're not complete alternate realities, just small pocket dimensions where things are different that exist for a while and then fade away.
I dont think they have the power to change anything, now that everyone who dies in the OG is already dead in the remake too.

Tries to cause a multiworld crash at the end of Rebirth for reasons that escape me. Uses his time shenanigan to kill Aerith after Cloud stops him. This breaks the current world's timeline even more which is why everything after goes to shit.

There's like 3 or 4 active Aeriths at the moment.
1. Remake Aerith, she does die in Rebirth after activating Holy just as OG foretold. She knew this would happen.
2. Zack World Aerith, still in a coma with no agency.
3. Aerith World Aerith, the one you go on a date with after falling off of the Temple of the Ancients. She decided against or wasn't given the opportunity to go on the adventure but knew that Remake Aerith was going to need her copy of Holy so she gives to Cloud after he falls into her world.
4. Future Aerith, probably OG Aerith that was able to communicate with Remake Aerith about what was going to happen and what she needed to do. This is who Aerith was talking to when she said she didn't know how to pray. This is also probably the Aerith you fought with for the final Sephiroth.

Tries to save Aerith and succeeds but Sephiroth uses a time warp to kill her anyway. This glitches Cloud's position in the universe into the chaos realm where he meets up with Zack and Aerith. The glitchiest after Aerith dies is because time got fucked and it's trying to fix itself. It's like a Dragon Break from Elder Scrolls lore. Basically time get fucked and what happens next is nonsense but however it ends up is what matters. And Aerith does die. I mean, no offense, but you're wrong on both accounts. Sephiroth literally describes it in Nibelheim, and he implies it as basic studies for Shinra personnel, let alone SOLDIERs. It's hard to forget considering it's a "Look at the camera and explain what the fuck's going on" type of exposition dump, but we're all getting older I suppose.
Long story short, Materia IS the Lifestream, but more importantly than that, it's in contact with all of the other Lifestream. When "Magic" is cast it's not actually from the Materia, the Materia itself is akin to a telephone with a pre-recorded message. You ring up the Lifestream, the message plays, whatever was programmed is heard, and the Lifestream responds. Except the Lifestream is retarded, because somehow these slit-eyed morons couldn't come up with a storyline where an evil guy is just evil and powerful, instead his evil has to be convoluted and make fuck all sense.
And you know what's even better? They fucked it up even more in Afterbirth, because now not only does Meteor exist, guess who it was programmed by? MOTHERFUCKING ALIENS WHO DON'T EVEN HAVE ACCESS TO THE LIFESTREAM AT ALL!
