Which version is the definition version of tactics, should I hunt down an physical version of the PSP one or can I play the PS1 which was almost identical to the new remastered version?

FFT's predecessor, Tactics Ogre, has a similar problem, maybe worse. the original SNES/PS1, PSP, and modern Reborn versions are all different from eachother and there's not really a good answer to which one is definitive.

Maybe I didn't grasp the systems properly, but both Tactics and TA (probably the same shit with TO and TA2) felt very grindy to actually get units online. Too much of a chore, so I would never really get far without being completely bored.

With FFT, yes. The grind is one of the core gameplay systems. Not so bad with FFTA. You usually learn the ability after 2-3 fights
FFTA is the same

Tactics Ogre is really weird depending on what one you mean but assuming Let Us Cling Together. There's grind but not as obnoxious as FFT. You can literally beat the game without ever swapping classes on a unit.

In the remaster you can back out of any battle with no consequence besides losing xp progress and items you found. You can also just skip all random battles, which makes the errand system feel a little goofy.

The random battles decide their enemies' levels on the average of the units' levels you bring. I dunno why you have high level units and then bring low level unit unless you were grinding Cloud but even then your big boy units should easily take care of the enemies who have even lower levels than if you had bring all high level units.

Job systems are inherently grind fests since the only thing stopping you from getting to that next job you want is how much time you want to spend grinding. You can choose to not grind which makes the game a little bit harder, but it's always up to the player.

Tactics Ogre doesn't have the same type of system. Units are single classes and you only unlock a single "freeform" class in the final chapter and only depending on a certain chain of events. Reborn, despite the endless bitching about it, did the right thing by adding a story-based level cap which allowed you to spend some extra time working on team configs without over leveling, which is a problem in the other versions.
