Also, the whole reason why they didn't have spears and such beyond the bleeding was because in-universe, they never managed to make the weapons be just big enough to hurt the Kaiju, but also just light enough for the Jaegers to properly swing it around or even store it in-between missions. The sword at the very end was designed specifically by the designer of the jaeger in question after years of research and it's made of small segments that are attached to the jaeger itself.
