The most hardcore and competitive players play the popular ones - the same ones often disparaged as "casualized" as they have the highest level of competition due to having the highest amount of players, more money on the line etc. Those are also easier to get into at the same time, because a bigger playerbase means it's easier to get matched with players of similar level which goes for beginners as well. Some fighting games have more complexity in terms of game mechanics or more characters/moves or theoretically higher skill ceiling or whatever but to think this makes the game in practice "hardcore" is a mistake IMO. For example Tekken (even if you think T8 is "casualized", this goes for earlier entries as well) has an insane amount of stuff to learn but is at the same time a great button mashing party game, weirdly in part for the same reasons there's so much to learn (large move lists make the button mashing more entertaining). And a skill ceiling remains quite theoretical thing unless there's a crazy amount of competition and optimization going for the meta to evolve that far.
