If the goal of the game is to defeat the enemy, why would you get in the way of that by making me have to dodge/block/parry/whatever other lame slop mechanic there is? That is dishonest design. If I hit the enemy, I should be able to kill it, forcing me to play simon says only wastes my time and turns the story into a grind.

Generally in action games the goal is to both kill the enemy and avoid being killed. So, the optimal way to play is to do damage while also actively avoiding the enemy's attacks.

Those are the tools you are given to achieve your goal. This is not any more dishonest than a platformer with a goal of "reach the top" making you jump in a roundabout way instead of giving you an elevator.
In fact one would consider the roundabout way the point of the game. Are you sure you know what a game is? It's not a movie or book, you can't just skip chapters you don't understand with big words.

That's why I like games with parry systems where rather than having a block button you parry by clashing, the winner being either the person with the stronger attack or in some games some sort of rock paper scissors system.

I played through all of lies of p base game and the dlc. Cant remember doing much parrying. I did spam that puppet string attack that launches you in the air though.

I would say both are considerably more difficult.
Sekiro has a very stiff initial learning curve, but parry timing is similar to Stellar Blade.
Lies of P had a lot more options and less of a learning curve, but the parry window is tighter (about six frames). You don't have to perfect guard a lot though if you don't want. In Sekiro it's mandatory.

Lies of P ramps up quite a bit in the mid game. You're gonna have to grind out some boss movesets and have patience to die a lot and learn combos piece by piece
